This picture was taken around 1895 in Glasgow and shows the staff who were employed in the Market Restaurant – all women.

Even today in the 21st century, the catering industry still has far more women working in it than men, and is one of the least well paid career areas.

In fact, catering is one of the notorious Five Cs, where most women work and pay is lowest:

• Cashiering
• Clerical
• Caring
